One of the things I’ve been trying to focus more on now that I’m home everyday is figuring out my “meal plan”. I think it was easier for me to plan stuff out when I was on the road. When I was traveling for my current project, I’d grab lunch at Whole Food and get something at their hot/cold bar in one of their small containers. Then for dinner, I’d have the week planned out on places I’d want to visit/explore/experience. Now that I’m WFH and have the option to cook, I’m planning out the following:

  • Breakfast: coffee/espresso and lots of mint tea

  • Lunch: oatmeal w/ flax seed, chia seed, hemp seed and a fried egg

  • Dinner: TBD - this has been a mix of either soups, tacos, meat/veggies, dumplings, salads

I’m trying to stick to minimizing my beef intake but still eating variety of poultry or seafood (for now). It was easy to incorporate veggies while on the road (find it at the hot/cold bar or ask the server to sub out side for veggies) so it does require some additional thought to make sure I’m getting the right balance of macros/micro nutrients. I plan to stick with this for the month of April and (assuming we’re still on lock-down through May) look to go keto for May to “shock” my body a bit while not getting the workouts I’m used to participating in.

In other news, surprised but also sad that UFC got postponed for the interim. But if this means that Khabib/Ferguson happens… I’m all for it. Been waiting too many years for this to happen and will be good to see how they match up.

  • Currently watching: Never Too Small on YouTube - I used to watch This Old House On PBS when I was a kid. Something about building/fixing stuff drew me in. I’ve never really spent time focused on or developing that skill but stuff like architecture and how homes can flow and how you can hide/repurpose space and furniture.

  • Currently listening: Electric Replay on Apple - Still got this on repeat. So good…

  • Currently reading: Moonwalking with Einstein by Joshua Foer - I haven’t put aside time to read today yet… but planning on getting in 2-3 chapters in today and getting into some of the methodology/processes to implement. Also using this time to practice on improving my reading speed as well.
